Recipe: Peppermint Mocha Marshmallows

Bloom the gelatin:

•2 scoops gelatin

•1/2 cup cold water

Sugar mixture:

•1/2 cup water

•1 cup sugar

•1 tsp vanilla extract

•1 tbsp instant coffee


•Clean Candy Canes (yum earth or Hammonds are two good brands)


1.In the bowl of a standard mixer, bloom the gelatin in the cold water. All you have to do is sprinkle the gelatin over the cold water and let it sit for about 10 minutes until it is fully bloomed.

2.Place 3-4 candy canes in a bag and smash them until they are in small pieces. Measure out 1/4 cup, and set aside

3.To a sauce pan, add the sugar, water, vanilla extract, and instant coffee

4.Heat on medium and slowly bring to a boil. Let it boil for about a minute, stir, and set aside.

5.Turn the mixer on low with the whisk attachment. Whisk the gelatin a few times, and then turn it up to medium as you pour in the hot sugar mixture.

6.Pour slowly, and then turn up to high for anywhere from 5-10 minutes, until the mixture is extremely fluffy and tripled in size. Pay close attention - you do NOT want to over or under mix the marshmallows. Add the 1/4 cup of crushed candy canes in when the mixture is starting to look like the consistency of marshmallow fluff.

7.Pour into a grease 9x9 baking dish and allow to harden in the fridge for 1-3 hours before cutting

8.Serve over coffee, hot chocolate, tea, etc. enjoy!
